GINGER'S ITALIAN ZUCCHINI BOATS | |
Most of my ingredients were reserved from a spaghetti dinner made a week ago. 4 large zucchini 1 to 1 1/2 cups hamburger & sausage, combined, cooked & drained 1/4 white onion, diced 1 to 1 1/2 cups spaghetti sauce (your favorite flavor) 2 cups finely shredded Mozzarella cheese gratuitous amounts of fresh, homegrown basil and oregano, finely chopped black pepper, to taste Cut zucchini lengthwise. Scoop out pulp and some meat, leaving a 1/3-inch "boat". Place boats cut-side down in a 9x13-inch glass dish, sprayed with olive oil. Spray the outsides of the boats with just a little more olive oil spray and put into an oven that is warming up to 350°F while you mix the other ingredients (about a 5-7 minute process). Mix all remaining ingredients in a bowl. Remove boats from oven and carefully flip them over. Spoon mixture down the center (about 4 tablespoons worth). Drizzle a little more spaghetti sauce and sprinkle a little cheese on top. Bake at 350°F for about 25 minutes. Let set about 5 to 7 minutes before serving. Note: Don't over-bake.
