STUFFED ZUCCHINI BOATS 
4 zucchini squash (approx. 7 inches long)
1 lb. ground turkey
1 med. onion, finely chopped
1 clove garlic, finely chopped
1/2 tsp. basil
1/4 tsp. oregano
1 tsp. Worcestershire sauce
1 (15 oz.) can tomato sauce
1 tbsp. Parmesan cheese

Cut squash in half lengthwise. With small melon baller, start about 1/2 inch from end and scoop out middle of squash, making sure not to take out too much.

Brown meat, onion and garlic in Teflon pan until no longer pink. Drain, add basil, oregano and Worcestershire sauce. Fill up boats with meat mixture and arrange in glass baking dish. Cover evenly with tomato sauce and top with cheese. Bake at 325 degrees for 50 to 60 minutes, or until squash is tender. Makes 8 boats.

Yum, I'm going to definitely try these! I think I would take the scooped out zucchini and mix it in with the meat mixture after it was cooked too. I hate to waste a good veggie. ;) Oh and I think I might call them Cap'n Z's Pirate Ships. LoL

I'm gonna use ground veal b/c I have some in the freezer, and the Zucchini is the only thing that is coming out of my garden this year. Since it bakes for an hour, I am just going to make a meat-loaf type mixture and put it in raw. I am also going to put some marinara and provolone on them after baking and broil till melty.

Well I started out wanting to make eggplant boats but my boyfriend bought zucchini. Then I didn't have ground turkey or beef so I used chicken. Decided to just chop up onion, grate a block of cheese, add tomatoe sauce, garlic, S&P, bread crumbs and stuff away! Looks good anyway!
