SAND TARTS 
1 1/4 c. sugar
1 tsp. vanilla
1 tsp. grated lemon rind
1 egg
3 c. flour
3/4 c. butter

Cream butter and add sugar. Blend until light and creamy. Beat in egg and vanilla. Stir in flour (sifted before measuring). Chill dough several hours. Roll very thin and cut in rounds. Brush tops with egg white. Sprinkle with sugar and cinnamon. Bake on greased cookie sheet for 8 minutes in 400 degree oven.
