STEWED PEAS 
1/2 lb. red peas
1/2 lb. corned beef
3 tbsp. flour
Scallion
Thyme
2 pimento seed
2 oz. butter
Black pepper
6 c. water

Soak peas overnight. Soak salt beef for 3-4 hours. Remove beef from water and cut in small squares. Add meat to peas and cook until soft. Make small dumpling with flour and water, then add to peas and meat mixture. Add scallion, thyme, pimento, butter and simmer until stew is thick.
