MICROWAVE FILLETS WITH LEMON
RICE
 
1 1/2 c. quick cooking rice (uncooked)
1/4 c. chopped onion or 1 tbsp. minced onion
1 tsp. salt
1 tsp. parsley flakes
2 tbsp. lemon juice
1 1/4 c. water
1 lb. fish fillets
2 tbsp. butter
Paprika

In a 2 quart baking dish, combine rice, onion, salt, lemon juice, parsley, and water. Mix well. Arrange fillets on mixture. Dot with butter. Sprinkle with paprika. Microwave covered with wax paper or plastic wrap. 10 minutes or until fish flakes. Let stand two minutes. Serve.

Since microwave ovens vary in power, you may need to adjust your cooking time.
