ZUCCHINI NUT MUFFINS 
3 eggs
1 c. oil
1 tbsp. vanilla
2 c. shredded zucchini, unpeeled
1 c. white sugar
1 c. brown sugar
2 c. flour
1 tbsp. cinnamon
1 1/2 tsp. baking soda
1 c. chopped pecans
1 tsp. salt
1/4 tsp. baking powder

Preheat oven to 400 degrees; grease muffin tins. Combine oil, eggs, and vanilla in bowl and blend well. Add zucchini. In another large bowl, combine the rest of the ingredients and blend well. Add the mixture from the first bowl to the dry ingredients and mix well. Fill greased muffin tins 2/3 full of batter and bake 20 minutes until golden.
