1/3 c. butter, softened 1 c. sugar 1 egg 2 c. sifted flour 1 tsp. baking powder 1/2 tsp. baking soda 1/2 tsp. salt 1/3 c. apple juice 3/4 c. white raisins 1/3 c. chopped pecans 1 c. finely chopped, peeled, apples With electric mixer, cream together butter, sugar and egg. Add sifted flour, baking powder, baking soda, and salt, alternately with the fruit juice. When thoroughly combined, add raisins, pecans and chopped apples; fold in. Pour into 3 small 7 1/2 x 3 - 1/2 x 2 - 1/4 inch bread pans which have been greased. Bake for 45 minutes at 350 degrees. |
