BAKED HALIBUT WITH PARMESAN
BREAD CRUMBS
 
6 halibut steaks, 1 inch thick (6 oz. each)
Salt to taste
Freshly ground black pepper to taste
1/2 c. dry bread crumbs
2 cloves garlic, minced
1/4 c. olive oil
1/4 c. Parmesan cheese
1/8 tsp. dried thyme, crumbled
Lemon wedges

Place steaks in an oiled shallow baking pan. Sprinkle with salt and pepper. Combine bread crumbs, garlic, oil, cheese and thyme to a thick paste and pat onto surface of steaks. Bake in a preheated 450 degree oven for 14 minutes per inch of thickness of fish or until fish is not longer translucent when tested with a fork. Garnish with lemon wedges and serve.

I had no bread crumbs so used crumbled crackers (5-letter brand name starts with V ends with A; put 3 in a baggie and mash it up for 2 portions). It was amazing, possibly the best fish I've ever made (other than a whole sea bass encrusted in a salt dome). I'll use bread crumbs this time just to see which we like better; cracker crumbs will probably win. All in all an easy recipe, practically foolproof. So if you're a beginning cook, start here to impress someone! And if you're not, this is still excellent and easy.

WOW. We just had this for dinner tonight. It was FABULOUS! We made it with italian seasoned bread crumbs, and still added the thyme, plus an extra clove of garlic. Mouthwatering..Delicious...EASY!

Great recipe! I have cooked this several times also subbed Salmon for Halibut. I marinate the halibut in lemon, salt, pepper, and a little EVOO for twenty minutes before baking. Makes the fish more tender and helps the breadcrumbs stick. Also try using mustard with the breadcrumbs!!
