BREAKFAST COFFEE CAKE 
1 c. pancake mix
1/3 c. sugar
1 egg
1/3 c. milk
1/4 c. butter, melted

TOPPING:

1/4 c. brown sugar
1/4 c. flour
1/4 tsp. cinnamon
2 tbsp. butter

Heat oven to 375 degrees. Mix pancake mix, sugar, egg, milk and butter. Pour into greased round cake pan. Mix ingredients for topping until crumbly. Sprinkle over batter. Bake 20 minutes.

I mixed in a packet of hot chocolate and added all spice. It was delicious. I suggest adding oatmeal or nuts or gram crackers for extra texture tontopping it tends to sink to the bottom.

I added chopped granny smith apple, chopped pecans, vanilla and cinnamon. Also used sour cream. I doubled the recipe as well. It's in the oven right now... I can't see how it could go wrong!

I've made this a few times already and love this recipe. I ran across it a few months ago when the local grocery store was closed and my family was asking me to bake something sweet. For me, it's convenient since I always tend to have these ingredients on hand. I haven't tried any variations, but like the sound of adding some vanilla or almond extract. It's very tasty as is though.

I made this with a Trader Joe's Pumpkin pancake mix, which made it extra moist and yummy. Great, easy recipe that adapts to what you have on hand. I also jazzed up the streusel topping with some walnuts and oatmeal.

Very easy and delicious. My only complaint would be that the toppings seem to sink to the bottom, so the last time I made it I put the cake in the oven while making the toppings, then added them after a few minutes. I have also chopped up a caramel apple and added it to the toppings, which was fantastic!

Great recipe! The cake turned out fluffy and delicious! I would add a few teaspoons of vanilla and a tiny bit of almond extract as well. Also: it makes a really small cake so I would double the batch.

Very simple recipe, easy to make and tastes just right. I was out of butter so I used vegetable oil and it still worked just fine. I added oats to the topping for some texture and color.
