TOFFEE BITS COFFEE CAKE | |
1 cup brown sugar 1 cup granulated sugar 2 cups all-purpose flour 1 tsp. baking soda 1 tsp. salt 1/2 cup (1 stick) butter, softened to room temp. 1 cup buttermilk 1 large egg 1/2 tsp. vanilla 1/2 cup chopped pecans 1 (8 to 12 oz.) bag toffee bits Preheat oven to 350°F. Grease cake pan really well (any shape pan will do). Mix both sugars together. Reserve 1 cup of the sugar mixture in a separate bowl for the topping later. Mix the rest of the remaining sugar mixture with flour, baking soda, salt and softened butter. Next mix in the wet ingredients, buttermilk, egg and vanilla. Pour into prepared pan. Bake at 350°F for 35 minutes. While the cake is baking, mix reserved sugar mixture (from above) with pecans and entire bag of toffee bits. When the cake is done baking and while it is still hot sprinkle the topping mixture over the top of the cake and continue baking for 5 to 10 minutes to get the sugar to caramelize just a little bit.
