FROSTED FRESH APPLE CAKE | |
3 cups all-purpose flour (unsifted) 2 cups sugar 1 cup mayonnaise (not salad dressing) 1/3 cup milk 2 eggs 2 tsp. baking powder 1 1/2 tsp. cinnamon 1/2 tsp. nutmeg 1/2 tsp salt 1/4 tsp. ground cloves 3 cups chopped peeled apples 1 cup seedless raisins 1/2 cup chopped walnuts Preheat oven to 350°F. Grease and flour two 9-inch round cake pans or a 13x9-inch pan. In a large bowl with mixer at low speed, beat first 10 ingredients 2 minutes, scraping bowl often with a spatula. Stir in apples, raisins and chopped nuts. Pour into pan. Bake at 350°F for 45 minutes or until cake tester inserted in center comes out clean. Cool in pans 10 minutes. WHIPPED CREAM FROSTING: 1 cup whipping cream 1/2 cup confectioners' sugar 1 tsp. vanilla Note: For 9-inch round layer cake, double frosting recipe. Beat whipping cream until peaks form. Add the sugar and vanilla. Beat. FOR ROUND LAYERS: Remove. Cool. Fill and frost with whipped cream frosting. FOR 13x9-inch PAN: Cool completely. Frost with whipped cream frosting. Submitted by: BLS |
