FRESH FALL APPLE CAKE | |
3 cups all-purpose flour 2 1/4 cups sugar, divided 1 tbsp. baking powder 1/2 tsp. salt 4 eggs 1 cup vegetable oil 1/3 cup orange or apple juice 2 1/2 tsp. vanilla 4 medium apples, peeled, sliced 2 tsp. ground cinnamon Preheat oven to 350°F. In a mixing bowl, combine flour, 2 cups sugar, baking powder, and salt. Combine eggs, oil, juice, and vanilla; add to flour mixture and mix well. In a medium bowl, mix apples with cinnamon and remaining sugar. Spread 1/3 of the batter into a well-greased 10 inch tube or Bundt pan. Top with 1/2 the apples. Repeat layers. Carefully spread remaining batter over apples. Bake for 55 to 65 minutes or until a wooden pick inserted in the center comes out clean. Cool in pan for 15 minutes. Remove and cool on wire rack. Serve with Cool Whip or Vanilla Ice Cream. Submitted by: Belle |
