NO SHORTENING PINEAPPLE CAKE 
2 c. all purpose flour
2 c. sugar
2 eggs, beaten
2 tsp. baking soda
1 tsp. vanilla extract
1 c. chopped nuts
1 (20 oz.) can crushed pineapple with juice, undrained

Preheat oven to 350 degrees. Mix together flour and sugar in a large bowl. Add remaining ingredients and mix well. Pour mixture into an ungreased 9 x 13 baking dish. Bake for 45-50 minutes or until a toothpick inserted in the middle comes out clean. Cool completely before topping. Serve topped with fresh, canned or frozen fruit, confectioners sugar or Cream Cheese Frosting.

CREAM CHEESE FROSTING:

1 (8 oz.) pkg. cream cheese, softened
1 (4 oz.) stick butter
1 1/2 c. confectioners sugar
1 tsp. vanilla extract

Combine all ingredients in a large bowl. Mix with electric mixer until smooth and creamy.

I would think the pineapple no shortening cake is one of the easiest cake recipes to make! I have made this cake recipe since I was 14 years old, and now, I am 52 years old!

I was thinking of making this cake recipe to take over to a friends household for Thanksgiving in 2016. The problem is, somehow the recipe got misplaced! I am so glad I found the recipe here on Cooks.com!

In closing, please forewarn your family or friends this cake recipe has walnuts, some people are allergic to nuts.

My family has always called this recipe, "best ever no shortening cake".
