OLD FASHIONED SUGAR AND SPICE
COOKIES
 
2 1/4 c. shortening
3 c. sugar
6 c. flour
6 tsp. baking soda
3/4 tsp. salt
3 eggs, beaten
3/4 c. molasses
3 tsp. cinnamon
2 1/4 tsp. ground cloves
2 1/4 tsp. ginger
Confectioners' sugar (used for shaking/dipping baked cookies)

Cream shortening and sugar. Add eggs and molasses; beat well. Sift together flour, soda, salt and spices. Gradually stir into creamed mixture. Form dough into 1 inch balls placed 2 inches apart onto lightly greased baking sheets. If dough is too sticky to form balls, stir up to 1/4 cup additional flour. Bake in 375 degree oven for 8 to 12 minutes until cookies are medium dark brown throughout, not just edges. Remove baked cookies from baking sheet immediately. Gently shake several warm cookies at a time in a small bag of confectioners sugar. Makes 12 to 14 dozen cookies.

This recipe is exactly the same as one we have in my family for generations now....this one calls for more of the ingredients to make more cookies. For several years, I've been having problems with my recipe. My cookies are not rising as I remember. Could it be that my baking soda is not fresh or is it the kind of shortening I'm using (is butter better then margarine???) This time I added more flour and some baking powder and it was better. Can anyone help? This is a Christmas tradition at my house and I am disappointed that I can't replicate the cookie like I used to :)
