PEACH BREAD | |
2 c. mashed peaches (1 1/2 lbs. very ripe) 2 c. flour 1/2 c. sugar 1/2 c. firmly packed brown sugar 1 tsp. baking soda 1/8 tsp. salt 1 lg. egg, slightly beaten 2 tbsp. butter, melted 1/2 c. raisins or nuts In a bowl, mix flour, sugars, salt and baking soda. Drain peaches, put in bowl. Add beaten egg and melted butter. Stir in raisins or nuts. Stir in flour mixture. Pour into 9x5 greased and floured loaf pan. Let stand 20 minutes. Bake in 350 oven 45 to 55 minutes. Cool bread in pan 15 minutes. Remove from pan and cool on wire rack. |
