ESTHER AIKINS' COMPANY CASSEROLE | |
4 c. (1/2 lb.) noodles 1 tbsp. butter 1 lb. ground beef 2 (8 oz.) cans tomato sauce 1 (8 oz.) pkg. cream cheese 1/2 c. minced onion 2 tbsp. melted butter 1 c. cottage cheese 1/4 c. sour cream 1 tbsp. green pepper Cook noodles in salted water and drain. Add 1 tablespoon butter. Saute beef, then stir in tomato sauce and simmer until meat is done. Add pinch of salt and set aside. Combine cream cheese, cottage cheese, sour cream, onion and green pepper. Butter a 9 x 9 inch baking dish and spread bottom with half of the noodles, then cover with cheese mixture and rest of noodles. Add 2 tablespoons melted butter and top with meet mixture. Chill 2 hours or overnight. Bake at 375 degrees for about 1 hour. |
