“SCRAMBLED EGGS AND SOUR CREAM” IS IN:

SCRAMBLED EGGS AND SOUR CREAM 
5 eggs
1/2 cup dairy sour cream
1/2 teaspoon salt
1/8 teaspoon pepper
2 tablespoons butter
2 tablespoons chopped green onion
Paprika
Parsley

Beat eggs, sour cream, salt and pepper just until blended. Melt butter in skillet. Add onion and sauté until tender. Pour in egg mixture and cook over low heat until done.

Turn portions of egg mixture with spatula as it begins to thicken; do not stir and do not overcook. Garnish with paprika and parsley.

Makes 4 servings.

Oh! my! gosh!... this is fantastic. I adapted this down to 1 egg... by scrambling the egg - adding 1 tsp. sour cream & minced onions... scrambled in olive oil... then put on a piece of toast with tomato slices on top... I will ALWAYS fix my scrambled egg this way. I will alternate the Parsley flakes with dill. The sour cream makes this puff up... YUM!!!!!

This is very good. I made it for company brunch and they all loved it. It is very moist and tender and didn't take long to prepare. I served it with homemade bread and goat cheese spread.
