COUNTRY STYLE SPARERIBS AND
SAUERKRAUT
 
2 lb. country style spareribs
2 lb. sauerkraut
2 tbsp. butter
4 med. McIntosh apples (peeled, cored, and sliced)

Spice Mixture:
2 tbsp. brown sugar
grated rind of 1 orange
1/4 tsp. nutmeg

Score fat on ribs. Place on broiler pan in a 325 degree oven to render fat and partially roast meat for 40 minutes. Remove bone and fat from meat. Butter a 2 quart casserole. Layer the sauerkraut, meat, and apple. Sprinkle with the Spice Mixture. Repeat. Finish with sauerkraut. Dot with butter. Add water until it shows. Cover and bake at 325 degrees for 1 hour.
