HICKORY COUNTRY STYLE RIBS | |
4 lb. pork country style ribs cut into serving portions 1 1/2 c. cooking oil 3/4 c. soy sauce 1/2 c. vinegar 1/4 c. Worcestershire sauce 1/3 c. orange juice 2 tbsp. dry mustard 1 tbsp. coarsely ground black pepper 2 tsp. salt 2 tbsp. chopped fresh parsley 2 cloves garlic, minced Combine all ingredients except ribs; mix well. Place ribs in a shallow pan, cover with marinate and refrigerate for 24 hours. Before camping turn meat 2 times. Place hickory chips on hot coals. Remove ribs from marinade and place on rack over coals. Cook for 1 1/2 hours or until done, basting occasionally with marinade. Serve with vegetables, salad and French bread. Serves 6 (502 calories per serving). |
