ZUCCHINI BREAD 
3 eggs
1 c. oil
2 c. sugar
2 tsp. vanilla
2 c. shredded unpeeled zucchini
1 (8 1/4 oz.) can crushed and drained pineapple
1 c. chopped dates
1 c. chopped nuts
3 c. flour
2 tsp. baking soda
1 1/2 tsp. cinnamon
1 tsp. salt
1/4 tsp. baking powder

Beat eggs, oil, sugar and vanilla until mixed. Stir in the rest of ingredients. Mix well and pour into 2 well-greased bread pans. Bake at 350 degrees for 1 hour.
