ZUCCHINI SQUASH BREAD 
Mix well:

3 eggs, beaten
1 c. cooking oil

Add:

3 c. flour
1 tsp. salt
2 tsp. baking soda
2 c. sugar
3 tsp. vanilla
1 tsp. baking powder
2 c. grated unpeeled zucchini
1 c. chopped dates
1/2 c. chopped pecans, optional

Mix all ingredients well. Coat dates with flour before adding to batter. Spoon into 2 greased, standard sized bread pans. Bake 1 hour, 350 degrees. Makes 2 loaves.
