ZUCCHINI SQUASH LOAF BREAD | |
4 eggs 2 c. sugar 1 c. oil 3 1/2 c. unsifted flour 1/2 tsp. baking soda 1 tsp. cinnamon 1 1/2 tsp. salt 2 c. zucchini, grated, unpeeled 1 c. raisins 1 c. walnuts 1 tsp. vanilla Beat eggs, then sugar and oil. Add the dry ingredients. Add first mixture alternately with squash, raisins, walnuts, and vanilla. Turn into 2 greased and lightly floured 9 x 5 x 2 3/4 inch pan. Bake at 350 degrees for 55 minutes. |
