ZUCCHINI SQUASH BREAD 
3 eggs, beaten
2 c. sugar
1 c. oil
2 c. squash, unpeeled and grated
3 tsp. vanilla
3 c. flour
1 tsp. salt
1 tbsp. baking powder
1 tsp. baking soda
3 tsp. cinnamon
1 c. nuts, OR 1/2 c. nuts and 1/2 c. raisins
1/4 c. applesauce, for more moisture

Mix the eggs, sugar, oil, squash and vanilla together lightly. Sift dry ingredients and mix with squash mixture. Grease 2 loaf pans and flour lightly. Bake 1 hour at 325 degrees.
