ZUCCHINI SQUASH BREAD 
3 eggs
2 c. sugar
2 1/2 c. flour
2 tsp. baking soda
1/2 tsp. nutmeg
1 c. oil
1 tsp. baking powder
2 tsp. vanilla
1 1/2 c. chopped nuts (optional)
2 c. grated zucchini squash, unpeeled and drained
1 tsp. cinnamon

Beat eggs, add oil, sugar, vanilla and squash. Add dry ingredients. Stir in nuts. Pour batter into 2 greased and floured bread pans. Bake at 325 degrees for 1 hour.
