ZUCCHINI SQUASH BREAD 
3 eggs, well beaten
2 1/2 c. sugar
1 c. vegetable oil
2 c. grated zucchini, unpeeled
2 c. reg. flour, sifted
1 c. chopped dates
1 c. raisins
1 1/2 tsp. salt
1 tsp. baking powder
1 level tsp. baking soda
2 tbsp. cinnamon
2 tbsp. nutmeg
1 tbsp. vanilla
1 c. chopped nuts (walnut or pecan)

In large mixer bowl: Add sugar and oil to beaten eggs. Beat together until light and yellow. Mix in zucchini, dates, and raisins. Beat well, then add soda and mix well.

Slowly add flour which has had all dry ingredients added to it and beat well. Add nutmeats and vanilla and beat again. Will make two loaves bread 9 x 5 or 1 large and 5 small.

Preheat oven to 350 degrees at least 10 minutes. Large loaf takes one hour or until toothpick comes out clean and small about 40 minutes.
