ZUCCHINI BREAD 
1 c. brown sugar
1 c. white sugar
1 tbsp. cinnamon
1 1/2 tsp. baking soda
1 tsp. baking powder
1 tsp. salt
3 c. all-purpose flour
1 c. oil
1 tsp. vanilla
2 c. zucchini, shredded and peeled
1 c. nuts

OPTIONAL:

1 banana
1/2 box chopped dates
1 sm. can crushed pineapple

Mix all ingredients thoroughly. Pour into 2 greased and floured 9x5 inch loaf pans. Bake at 350 degrees for 1 hour. Cool in pans 10 minutes. Freezes well. Serve with cream cheese.
