MELON PIE 
2 cantaloupe or 1 lg. honeydew
2 pkgs. unflavored gelatin
1/4 c. sugar
1/2 c. orange juice
3 oz. softened cream cheese
9 inch graham cracker pie shell
2 sprigs fresh mint
Whipped cream

Puree melon in blender to make 3 cups. Slice remaining melon for garnish. In medium saucepan combine gelatin, sugar and orange juice. Stir over medium heat until dissolved. Add pureed melon and mix well.

In blender or processor, combine half the melon mixture with cream cheese until smooth. Stir in remaining melon mixture. Pour into pie shell. Refrigerate until set.

Serve as is or garnish with melon slices, mint leaves and whipped cream. (Peaches or poached pears may be substituted.)
