CHICKEN CASSEROLE 
2 c. cubed cooked chicken
1 can condensed cream of chicken soup
1/2 can water chestnuts, drained and sliced
1 carrot, grated
1 c. dairy sour cream
1 tbsp. chopped onion
1 (8 oz.) pkg. Stove Top cornmeal stuffing mix

Combine first 6 ingredients. Prepare stuffing mix as directed on box. Use 8 x 8 inch casserole; spread 1/2 stuffing mix in bottom of dish. Make next layer with chicken mixture. Add rest of stuffing on top. Bake uncovered at 350 degrees for 30 minutes or until hot and bubbly.
