CORNBREAD TOPPED BEAN CASSEROLE | |
1 lb. ground beef 1/2 c. chopped onion 1 (16 oz.) can pork & beans 1 (4 oz.) can drained green chilies 1 (1 1/4 oz.) pkg. taco seasoning mix 1/4 c. water 1 1/4 c. cornmeal 1/4 c. all-purpose flour 1 tbsp. baking powder 1 tbsp. sugar 1/2 tsp. salt 1 c. shredded cheddar cheese 1 c. milk 1 egg 3 tbsp. vegetable oil Brown ground beef and onions; drain. Stir in beans, chilies, seasoning mix and water. Spread in 8" glass baking dish. Heat oven at 350 degrees. Combine dry ingredients. Add cheese, tossing to coat, add remaining ingredients stirring just until dry ingredients are moistened. Spread topping evenly over ground beef mixture. Bake 30 to 35 minutes or until wooden pick comes out clean. Let stand 5 minutes before cutting to serve. 9 servings. |
