CORN CASSEROLE 
2 eggs
3/4 c. milk
1 (16 oz.) can cream style corn
1 c. cornmeal
1 tsp. salt
1/2 tsp. baking soda
1 onion, grated
1 sm. can or jar pimentos, chopped
1 (4 oz.) can green chilies or 3 Jalapeno peppers, seeded and chopped
Top with 1 c. grated Cheddar cheese

Mix all ingredients (except cheese). Pour in greased 13 x 9 x 2 inch casserole. Bake at 375 degrees for 30 minutes. Top with cheese. Bake 15 minutes more.
