POTATO CANDY 
1/2 c. mashed potatoes, warmed (homemade, not boxed)
1 lb. confectioners sugar
1/2 c. peanut butter

Mix warm potatoes with sifted sugar. Roll out and spread with peanut butter. Roll up like a jelly roll and slice.

This is an all-time favorite of mine. I have great memories of waiting for the potato to cool. We mixed a small cold cooked potato with the sugar then cooled the mix so it would roll, spread the peanut butter and sometimes jelly, cooled in fridge for about 30 minutes so it would slice just right. My kids love this. Thanks for the posting. Pass it on. It's kid friendly and aka "the diabetic coma" as Granny called it. Such an old-time recipe!!

Easier said than done! When I was 8 maybe 9 my mother tried to make Potato Candy from my grandma's directions and threw 2 cookie pans, two pots and a rolling pin out the back door before getting it right. That was the best Potato Candy ever made!!! Thanks Momma

This is a great recipe. I made it every year for my dad for christmas and my granny made it every year for him till she died. There are easier versions with a fluffier taste. But whoever gets this candy made for them knows they have been honored. My granny was the greatest cook. She put the whammy on everything

Another version here is to boil 1 small potato and drain well, mash while adding powdered sugar, adding more until ALL moisture is absorbed, roll out to thickness desired, top with layer of peanut butter, roll up like jelly roll, chill, slice to 1/4-1/2" in size. Long time treat of my childhood.

I didn't know anyone else made this! My father used to make it for us when we were kids. I learned not to use mashed potato that had milk added....just use a mashed boiled potato. He never measured, so the yield varied, depending on the potato, and the amount of sugar needed to make it the right stiffness to roll out. I must make this with my grandchildren!

Might try this also. The way I was taught. Boil on small potato in water till soft. Take potato out of water and remove the skin. Mash and whip potato till no lumps. Start adding conf. sugar till it form a stiff dough. Roll out on to a covered conf. sugar broad (clean table top) and work in more sugar. Roll out to about 1/3" thick and spread the peanut butter (we like a lot of peanut butter). Now roll up just as you would a jelly roll. Keep covered with wax parer. When completely cooled slice into 1/2" thick slices. Bring out the coffee, it's rich! Store in wrapped wax paper. If you do not like to make a mess, try rolling it out on wax paper. It's a xmas time candy for us. So, mess is my middle name. I like to just jump in and get it done and move on to the next project.

the boiled potato works best I think. The sugar melts this way. JC

My ex-husband used to make this all of the time at Christmas. It is absolutely to die for. Of course full of calories though. I am going to attempt making it for the first time in 20 years. Hope it turns out good.

My mother taught me this years ago. We made it for Easter too. You add the peanut butter to the dough and shape into egg shapes. Then you chill over night and I melt choc chips and coat each egg. You also can make it with coconut flavoring and sweetened coconut. MMMM enjoy

I am 73 years old and I think this might be the same recipe that the cook used when I was in elementary school. We (Lunch room children ) always looked forward to the next day after we had mashed potatoes on our tray. Mrs Cook would make Potatoe Candy before she left for the day, so we could have a piece on our lunch tray the following day. Thank you Mrs Cook (I'M sure she is in Heaven)
