IRISH POTATO CANDY 
1/4 c. (1/2 stick) softened butter
4 oz. cream cheese, softened
1 tsp. vanilla
1 lb. box confectioners' sugar
1 (7 oz.) bag flaked coconut
Ground cinnamon

Cream butter and cream cheese. Beat in the vanilla and confectioners' sugar, then the coconut. Roll into balls the size of a walnut. Roll in cinnamon and refrigerate until firm. Makes 3 dozen.

These turned out great. I put the mix in the refrigerator for about 30 minutes before I tried to roll it into balls. Made it easier to roll and then coat with cinnamon.

Been making these for years. There are other recipes out there but if butter isn't in the list of ingreditents it's not as good. You can also roll them in cocoa...I always double the recipe so I have plenty to share.

To make it healthier, I substituted coconut oil for the butter, some Truvia (which I ran through a blender to make it finer) for the confectioner's sugar (not at a 1:1 ratio, though), and *SOME* unsweetened coconut for *SOME* (not all) of the sweetened coconut (NOTE: I DID still use a majority of sweetened coconut flakes).
