TWICE BAKE POTATO 
6 lg. potatoes
butter for potato skin
1/2-1 c. sour cream
3 tbsp. butter
1 egg, well beaten
1 tbsp. chopped onion
3/4 c. Cheddar cheese
Salt & pepper
Grated Parmesan cheese

Rub potato with butter and prick with fork. Bake at 400 degrees until done, about 45 minutes. Cut each potato in half lengthwise and carefully scoop out the inside. Mash potatoes with all the above ingredients. Beat until fluffy. Pile mashed potatoes lightly and high into potato skins. Sprinkle with Parmesan cheese. Bake at 350 degrees until brown on top.
