AMAZING TWICE BAKED POTATOES 
3 med. potatoes, peeled and quartered
1/4 c. grated Parmesan cheese
1/2 of a 3 oz. pkg. cream cheese
1 tbsp. butter
1 tbsp. green onion, chopped finely
1/2 of a single serving env. (2 1/3 tsp.) instant onion soup mix
Dash of pepper
1 beaten egg
Milk
1 1/2 c. corn flakes, crushed

Mash cooked potatoes, stir in Parmesan cheese, cream cheese, butter, green onion, onion soup mix, pepper and mix well. Add 1 or 2 tablespoons milk if mixture is dry. Shape into 8 balls. Dip each ball into beaten egg; roll in corn flakes. Place on greased baking sheet and bake at 400 degrees for 10 to 15 minutes or until hot and crispy.
