TWICE-BAKED POTATOES | |
4 med. to lg. baking potatoes 1 egg 2 tbsp. milk 2 tbsp. grated Parmesan cheese 1 tbsp. butter 1 tbsp. finely chopped onions 1 tsp. chopped parsley 1/8 tsp. pepper Paprika to taste Preheat oven to 400 degrees. Bake potatoes for 45 to 60 minutes until easily pierced with fork. Cut potatoes in half lengthwise. Scoop out cooked potato and place in large bowl. Reserve shells. Add egg, milk, cheese, butter, onions, parsley and pepper, and beat until smooth. Spoon potato mixture back into potato shells, sprinkle with paprika. Bake at 350 degrees for about 30 minutes or until thoroughly heated. 4 servings. |
