TWICE - BAKED POTATOES | |
6 potatoes 3 tbsp. butter 3/4 tsp. salt Dash of pepper 3/4 c. milk paprika Prick potatoes. Cook high 16 minutes. Wrap with foil; let stand 5 minutes. Slice off and throw away top of each potato. Scoop out inside of each potato, left with 6 shells. In bowl, combine scooped out potato, butter, salt, and pepper; mash. Add enough milk to make fluffy. Spoon potatoes into shell; place on serving plate; sprinkle with paprika. Cook high 2 minutes; turn and cook 2 more minutes. Garnish with parsley. Makes 6 servings. Can be made ahead and refrigerated. Heat on high 8 minutes; turn dish after 4 minutes. |
