TWICE-BAKED POTATOES | |
4 lg. potatoes, baked 1 1/2 c. (6 oz.) Cheddar cheese, shredded 1/4 c. milk 1/4 c. Miracle Whip salad dressing 1 egg 1/2 tsp. salt Dash of pepper 4 slices bacon, crisp and crumbled Green onion slices (optional) Cut potatoes in half lengthwise and scoop out potato, leaving a thin shell. Put shells in a baking pan. Mix potato, 1/2 cup cheese, milk, salad dressing, egg, salt and pepper and beat until fluffy. Fill shells with mixture and top with 1 cup cheese and bacon (green onion). Bake at 350 degrees for 15 minutes (or can microwave until cheese melts). |
