TWICE-BAKED POTATOES 
4 lg. potatoes, baked
1 1/2 c. (6 oz.) Cheddar cheese, shredded
1/4 c. milk
1/4 c. Miracle Whip salad dressing
1 egg
1/2 tsp. salt
Dash of pepper
4 slices bacon, crisp and crumbled
Green onion slices (optional)

Cut potatoes in half lengthwise and scoop out potato, leaving a thin shell. Put shells in a baking pan.

Mix potato, 1/2 cup cheese, milk, salad dressing, egg, salt and pepper and beat until fluffy. Fill shells with mixture and top with 1 cup cheese and bacon (green onion). Bake at 350 degrees for 15 minutes (or can microwave until cheese melts).

Since microwave ovens vary in power, you may need to adjust your cooking time.
