TWICE BAKED POTATOES 
4 lg. baked potatoes
2 tbsp. milk
1/4 c. butter
4 crisply cooked bacon slices, crumbled
1 1/2 c. shredded sharp natural cheddar cheese
1/2 tsp. salt
Dash of pepper
2 tbsp. chopped chives

Slice each potato in half lengthwise; scoop out centers to form a shell. Mash potatoes; combine with 1 cup cheese, milk, butter and seasonings. Beat until fluffy.

If potatoes are too dry, beat in small amounts of additional milk. Stir in 1 tablespoon chives and half of bacon. Fill shells. Bake at 350 degrees for 20 minutes. Toss remaining cheese, chives and bacon together; sprinkle over potatoes. Continue baking 10 minutes. Serves 8.
