ANNIE'S FAVORITE BEANS | |
To be made in a 5 quart crock pot. Clean and sort and rinse 3 pounds of any kind of bean. I usually use Great Northern, small white or navy pea beans. Boil beans until the casings will fall off when gently blown on (about 1/2 hour). Put 2 tablespoons of baking soda in the beans for the last 10 minutes of boiling. Then rinse. Put in crock pot with a hunk of salt pork (Cut in slices through rind). For seasonings I use: 1 c. white sugar 1 c. molasses You may cut down or add to taste. Sometimes I use maple syrup instead of molasses. Dissolve 3 teaspoons dry mustard in 1/2 cup ginger ale (if I have it). Sprinkle the top of beans in the pot with garlic powder, about 2 tablespoons and do the same with onion powder. Add a package of onion soup mix, any kind. Add a small dash of pepper. I also add a small amount of poultry seasoning (sage). Add water to the top of the crock pot. It's a very full pot. Cook on high overnight (at least 6 hours). Enjoy. Every time I make them everyone seems to enjoy them, each time the recipe differs a bit, makes it good anyway. They are always eaten, every last bean! |
