PORK CHOPS & SPANISH RICE 
4 center cut pork chops (about 1/2-inch thick)
1/4 cup green bell pepper, chopped
1/3 cup onion, chopped
1 (15 oz.) can diced tomatoes (Hunts)
1/2-1 tsp. chili powder (to your taste)
1/4 tsp. black pepper
1/2 tsp. garlic powder
1 tbsp. brown sugar
1/3 cup long grain uncooked white rice (regular, not instant)

In skillet with lid brown pork chops on first side for about 5 minutes. Turn chops; add onion and green pepper. Cook vegetables for about 2 minutes, stirring occasionally.

Add rice, tomatoes, black pepper, garlic, chili powder and sugar. Stir and cover. Simmer for 25 to 30 minutes until rice is tender.
