BROCCOLI - HAM CASSEROLE 
1 lb. fresh or 1 (10 oz.) pkg. frozen broccoli
1 1/2 tbsp. butter
1 1/2 tbsp. flour
1/2 tsp. salt
1 1/2 c. milk
1 1/2 c. cooked ham, chopped
2 tbsp. green pepper, chopped
1 tbsp. parsley
2 hard-cooked eggs, chopped
1/4 c. American cheese, grated
1/4 tsp. lemon juice
2 tbsp. butter, melted
1 c. bread crumbs

Cook broccoli. Make white sauce with butter, flour, salt, and milk. Cook until medium thick. Cut cooked broccoli into one inch pieces and place in buttered 1 1/2 quart casserole. Combine ham, green pepper, parsley, eggs, cheese, and lemon juice. Cover broccoli with ham mixture. Combine melted butter with bread crumbs and spread over top. Pour white sauce over casserole. Bake at 350 degrees for 20 minutes. Yield: 5-6 servings.
