VERANIKA (GERMAN DISH) 
In a large bowl, whip 3 egg whites. Add 1/2 cup milk and whip again. Add about 2 cups of flour, 1/2 teaspoon salt. Use enough flour to knead.

FILLING:

Mix 1 pint dry cottage cheese, 3 egg yolks, salt, pepper, and a little cream. Roll out dough on flour board. Cut into squares and put 1 tablespoon of cheese mixture on each square. Fold over and press the edges together. Have a kettle of boiling water ready and drop in one at a time. Bring to a boil until done.

SAUCE:

Fry slices of ham or bacon. Use that fat with 1/2 tablespoon of flour and brown. Add cream and serve with the Veranika.

Learned of these from my great grandmother...she called them "cheese pockets". After boiling we fry them in butter and onions. Then serve them with fried onions and plenty of sour cream. Yummy!

In the summer season we use fresh sliced strawberries with a touch of sugar. The sauce we make is made with butter and flour melted in saucepan to that we add a can of carnation milk lots of pepper and stir till thickened. Yum yum so good!

My family always made the dough like noodle dough... letting it dry before cutting. Then find dry cottage cheese (we now use a Mexican cheese which almost like it), egg and chives. Cut them into rounds and place a tablespoon of mix and sea. While the Veranika is boiling we fry up onions, and ham. After the ham is done we make a gravy of the drippings from the ham and add the onions.
