MEXICAN FISH DISH | |
I usually serve this over plain white rice. It is also good topped with guacamole at time of serving. Very fast, easy and delicious! 1 1/2 lb. cod (or your favorite white fish) 1 cup salsa (your choice) 1 cup cheddar cheese tortilla chips, coarsely crushed 1/2 cup dairy sour cream (optional) Preheat oven to 400°F. Lightly grease 8x13-inch baking dish. Rinse fish with cold water and pat dry. Place in dish. Cover with salsa, followed by cheddar cheese, and then top with chips (if using). Bake at 400°F for 15 minutes or until fish is opaque and flakes with fork. Serve. Top with dairy sour cream. Tips: The measurements are approximate. Basically, you just have to have enough salsa and cheese to cover entire dish. Keep in mind that too much salsa may make the dish watery. Submitted by: Deana Kean |
