MY FAVORITE BEEF ENCHILADA'S 
2 lbs. hamburger
1 onion, diced
1 lb grated cheese
1 pkg. enchilada mix
4 cans tomato sauce
2 to 3 dozen tortillas shells
1 taco pkg.
1 tsp. salt
1/2 tsp. cajon pepper
2 cans water

Brown hamburger in skillet with onions, salt, cajon pepper, drain grease, add taco package and simmer for 15 minutes.

In sauce pot put tomato sauce, enchilada mix, water bring to a boil. Take off burner put tortilla shells in and soak to just soft. Put some of the tomato sauce mixture in bottom of pan then take 1 by 1 shells out. Put some meat and cheese in each shell and roll them up, put side by side in pan add tomato mixture and top with left over cheese. Bake at 375 degrees in oven for 30 minutes. Ready to serve.
