JUNIPER SPRINGS SALAD 
1 pkg. lime Jello
1 c. cold water or juice
1 c. crushed pineapple, juice & all
1/2 c. sour cream
1/2 tsp. salt
2 tbsp. grated coconut
1 c. hot water
1 c. grated carrot
4 maraschino cherries, cut up
8 oz. pkg. cream cheese, softened
2 tbsp. powdered sugar

Dissolve Jello in hot water, add cold water or juice. Add 1/2 package of cheese to Jello and beat. Add fruit and carrots. Put in 8" pan and chill until set.

Cream together the 1/2 cup sour cream and remainder 1/2 package cream cheese. Add salt and powdered sugar. Mix and spread over set Jello. Sprinkle with coconut. Refrigerate. Serves 6.
