CHICKEN OR TURKEY CHOW MEIN 
8 oz. can mushrooms
2 c. cooked chicken or turkey
2 tbsp. melted butter
2 c. diced celery
1 1/2 c. chopped onion
2 c. chicken broth
16 oz. can mixed Chinese vegetables, drained
2 tbsp. corn starch
3 tbsp. soy sauce
Salt and pepper to taste

Brown chicken or turkey in butter; add celery, onion, salt, pepper and chicken broth. Cook on medium heat 5 to 10 minutes; add vegetables and mushrooms; simmer 1 to 2 minutes. Dissolve cornstarch in soy sauce; add to chicken mixture; stir until slightly thickened. Serve with rice or noodles.
