FRESH APPLE SPICE CAKE | |
3 cups all-purpose flour 1 tsp. baking soda 1/4 tsp. salt 1 tsp. nutmeg 1 tsp. cinnamon 1 cup vegetable or canola oil 2 cups white sugar 3 eggs room temperature 1 tsp. vanilla 1 cup chopped walnuts 3 cups peeled and finely chopped apples Grease a 10-inch tube pan. Combine oil and sugar, beat well, adding eggs one at a time then add vanilla. Add dry ingredients, mix well until well blended, then add nuts and apples; mix well. Pour into tube pan and bake in a preheated 325°F oven for 1 hour 15 minutes or until done. Place on rack to cool but do not remove from pan. Glaze: 1/2 cup white sugar 1/4 cup buttermilk 1/4 tsp. baking soda 2 tbsp butter 1 1/2 tsp. vanilla Combine ingredients and bring to a boil. Cook for 4 minutes. While cake is still warm, poke holes in top then spoon glaze over the top. Let cool before removing from pan. Submitted by: Nancy C. |
