PEANUT BUTTER COOKIES 
1 c. shortening (butter flavor)
1 c. sugar
1 c. brown sugar
2 eggs
1 tsp. vanilla nut extract
1 c. peanut butter
2 1/2 c. flour
2 tsp. baking soda
1/2 tsp. salt

Marjorie Fitz uses 1 tsp. baking soda.

Cream together shortening, sugars, eggs and vanilla; stir in peanut butter. Mix together flour, soda and salt and mix into creamed mixture. Roll into size of walnut size and drop on ungreased cookie sheet. Press with floured fork to make criss-cross design. Bake at 350 to 375 degrees about 10 minutes or until light brown. Makes about 5 dozen cookies.
