PEANUT BUTTER COOKIES | |
2 c. Basic Nutritious Mix 2/3 c. brown sugar, packed 1 c. peanut butter 1 beaten egg 1/4 c. water Stir sugar and peanut butter in Basic Nutritious Mix. Mix water and beaten egg and add to mix. Stir well. Shape into little balls on ungreased cookie sheet. Flatten with a fork. Bake at 350 degrees for 10 minutes. CAKE MIX: For each 1 1/2 cup Basic Nutritious Mix, add 1/2 cup sugar. Store. 2/3 c. water 1 egg 1/2 tsp. vanilla Double this for a layer cake. Use 9 inch pan. Mix well. Bake at 350 degrees for 25 minutes. Variations: Substitute juice, pumpkin, applesauce, buttermilk, 2/3 cup banana plus 1/3 cup water, 2/3 cup pudding plus 1/3 cup water for the 2/3 cup water in the recipe. These are good snack cakes needing no frosting. Spice Cake or Applesauce Spice Cake: Add 1/3 teaspoon cinnamon, 1/4 teaspoon nutmeg and 1/8 teaspoon cloves. Applesauce Spice Nut Raisin Cake: Add 1/3 cup raisins and 1/4 cup nuts to Applesauce Spice Cake. Chocolate Cake: Add 1/3 cup carob or cocoa to Basic Cake Mix. Note: Liquid may need to be increased if batter is not of cake mix consistency. Flours differ in water content. BROWNIE MIX: For each cup of Basic Nutritious Mix, add 1/3 cup carob or cocoa and 1 cup sugar. (Or delete sugar and add 1/2 cup honey in recipe and sue 1/4 cup water instead). Store. 2 eggs (or 1 if prefer chewy brownies) 1/2 c. water 1 tsp. vanilla 1/4 c. oil Mix together. Add 1/2 cup nuts or granola and/or peanut butter. Bake in large pan at 325 degrees for 35 minutes. CORNBREAD MIX: For each cup of Basic Nutritious Mix, add 1 cup cornmeal and 2 teaspoons sugar (or omit sugar and add 4 teaspoons honey if recipe if desired). Store. 1/2 tsp. salt 1 egg, beaten 1 c. sweet, sour milk, buttermilk or yogurt Stir just to blend. Bake in pan or muffin tin at 400 degrees for 20-25 minutes. Cheese Cornbread: After pouring into pan, sprinkle with shredded Cheddar cheese and sesame seed. Bake. |
