FISH FILLETS IN GINGER SAUCE 
1/2 cup soy sauce
2 tbsp. Szechuan Spicy Stir-Fry Sauce
3 tbsp. sugar or equivalent
1/4 teaspoon garlic powder
2-3 tbsp. minced fresh ginger
2/3 cup water
1 to 2 pounds small fish fillets
1/2 cup fried fish breading
1/3 cup vegetable oil (for cooking)
2 or 3 large green onions, chopped

Fillets should be wet.  

In a small bowl, mix the first six ingredients.  Heat vegetable oil in a large skillet over medium-high heat. Put breading in a gallon plastic bag, add fish to bag and shake to coat thoroughly.  

Put the breaded fillets onto clean plate.  Add fillets to hot oil and fry for one minute until lightly browned.  Turn over fillets and brown on other side for another minute.  Turn heat down to medium and pour soy sauce mixture over fillets.  Turn fish over one last time to coat with soy sauce mixture.

Cover pan and let fillets simmer about 3 minutes (up to 5 minutes for larger fillets). Transfer fillets to serving platter and drizzle sauce over top. Sprinkle green onions over the top.
